French Onion Chicken Bake



°4 onions, peeled and sliced

°4 tbsp butter

°4 cloves garlic, chopped

°1/2 tsp pepper

°1 tsp thyme

°2/3 cup low sodium beef broth

°2 tbsp balsamic vinegar

°4 skinless boneless chicken breasts

°1/2 tsp salt

°1 cup mozzarella cheese, grated

°1/2 c grated Parmesan cheese

* Methods 

Preheat oven 400 degrees & spraying a baking dish with cook spray

Add the butter to a large skillet over medium heat. Adding sliced onions and cooking for 5 minutes, stir occasionally.

Reduce heat to medium and add garlic, pepper and thyme and cook for another minute

Stir in beef broth and balsamic vinegar and cook until onions have a jam consistency, about 10 minutes.

When the onions are caramelized, place about 1/3 of the mixture in the bottom of the greased baking dish.

Place the chicken on the onions and sprinkle with salt.

Place the remaining onions on the chicken with the mozzarella and Parmesan cheese.

Bake for 30 minutes or until the chicken has a safe internal temperature of 165 degrees
