Chicken Rockpot Green Enchiladas
*Ingredients:
°2.5 lbs. Boneless, skinless chicken breast
°28 oz. Green Enchiladas Sauce Box
°24 oz. Chicken broth
°1 cup half-and-half or heavy whipping cream
°2 cups monterey jack cheese
°4 oz. Cream cheese, cubed, at room temperature
°4 oz. green salsa (green salsa)
°Salt and pepper to taste
*Methods :
In a crock pot, add chicken breasts or thighs, green enchiladas and chicken broth... Simmer on low heat for 6-8 hours.
About 30 minutes before serving, remove and chop chicken. Add shredded chicken, jack cheese, cream cheese, 1/2 and 1/2 green sauce to crock pot. Stir until cheese melts. *You can add additional sauce to taste.
You can add sliced avocado, cilantro, green onion, and sour cream to slices, and add crunchy tortilla strips if you like!
