Ingredients :

°3 thick slices of chopped bacon (3 ounces)

°2 pounds white cabbage, cored and chopped (10 cups)

°1 tsp minced garlic

°pinch of crushed red pepper flakes

°1/4 tsp sea salt

°Two teaspoons of Dijon mustard

°2 teaspoons of apple cider vinegar

°Freshly ground black pepper

* Methods :

Add bacon, in a single layer, to a large skillet over medium heat. Cook, stirring occasionally, until fat melts and becomes crunchy; 6 to 8 minutes. Remove the saucepan from the heat, then use a perforated spoon to transfer the bacon to a bowl and save it for later.

Remove all of the bacon fat from the skillet except for the tablespoon. (Leave more or less, depending on your preference. A tablespoon tastes good, but doesn't make cabbage fat.)
Return the saucepan to medium-high heat and add the cabbage, garlic, red pepper flakes, and salt. It may seem like a lot of cabbage for the pan, but during cooking the cabbage will wilt.

Cooking, stir occasionally, to cabbage is soft & some cabbage begins to turn  little brown; From 11 to 16 min . Add mustard, apple cider vinegar, and cooked bacon. Taste and adjust with more salt, pepper, and vinegar as needed.

Enjoy!
