I like to make pancakes with Chinese sausage.It also goes well with grilled ham and cider or breakfast sausage.For these and other foods, they can be a great choice for French fries.My child is married and I am a widow. So I do not prepare dinner dinner as a good deal as I used to.When I serve this dish, the guests always ask for the recipe. And whilst my son and his family visited me from Winnipeg now no longer too lengthy ago, one of the first things he ordered had been the best potato pancakes!

* Ingredients :

° four cups cold mashed potatoes
° five slices of bacon
° half teaspoon onion powder
° half teaspoon salt
° half teaspoon black pepper
° 2 eggs, beaten well
° Semi cup shredded cheese cheddar

* Directions :

Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, till browned and crispy, approximately 10 mins.Remove the bacon strips and set aside so that the broth and bacon can drain into the pot.Mix the mashed potatoes, eggs, onion powder, salt and black pepper in a bowl.Add grated bacon and cheddar cheese.Divide the mixture into eight portions.

Heat bacon broth over medium heat, and fry pancakes in broth till cooked through on every side, approximately four mins in line with side.
