CHICKEN FRIED STEAK
*ingredients:
°4 beef cubes (1/2 pound)
°2 cups all-purpose flour
°2 teaspoons baking powder
°1 teaspoon baking soda
°1 teaspoon black pepper
°3/4 teaspoon salt
°1 1/2 cups milk
°1 egg
°1 tbsp. Chili sauce (eg Tabasco(TM))
°2 cloves minced garlic
°3 cups vegetable ghee for frying

°1/4 cup all-purpose flour
°4 cups of milk
°Kosher salt & ground black pepper
* Methods :
1. Poke steaks about 1/4 inch thick.
2. Put 2 cups of flour in a flat bowl.
3. Stir the baking powder, baking soda, pepper, and salt together in a separate shallow bowl.
4. Add the yoghurt, eggs, Tabasco sauce, and garlic.
5. Dip each slice in the flour first, then in the mixture, and again in the flour. Spread flour on top of each slice until completely covered with dry flour.
6. Heat the ghee in a deep cast iron skillet to 325°F (165°C).
7. Fry steak until golden brown, 3 to 5 minutes per side. 8. Place the fried steaks on a plate with paper towels to drain.
For the graffiti:
9. Drain the fat from the pan, reserving ¼ cup of the liquid and as much of the solid residue as possible.
10. Return the skillet to medium-low heat with the reserved oil.
11. Whisking rest flour to oil.
12. Scrape the bottom of the pan with a spoon to release the solids into the broth.
13. Stir in the milk, raise the heat to medium, and bring the broth to a simmer, and cook until thickened, 6 to 7 minutes.
14. Season with salt and pepper.
15. Put the meat broth over the steaks with a spoon to serve.
